Jar Salad with Ginger Powder Dressing – Vegetarian Recipe by SOAKS

Kumiko Takeshima, the owner of this wonderful organic café with a large selection of healthy vegetarian and non-vegetarian dishes has produced a video about how to make trendy “jar salad”, fortified with one gram of powdered ginger straight from her arsenal of Soaks’ certified fertilizer-free vegetable powders. One gram of powdered ginger is what you get when you powder 100 grams of fresh ginger. Delicious energy packed salad that is really easy to make.

  • One “Ball Jar” or other similar jar

Dressing

  • Ginger powder– 1g
  • White wine vinegar – 20g
  • Olive oil- 5g
  • Apple juice – 5g
  • Honey – 5g
  • Herb Salt – a pinch
  • Pepper – to taste

First add ginger powder to olive oil and stir thoroughly. Combine remaining ingredients and mix until all are evenly distributed into a delicious dressing.

Vegetables

  • Broccoli – 4 florets
  • Cauliflower – 4 florets
  • Red and Yellow Peppers (Paprika) – 1/4 each, cut in strips
  • Cherry tomatoes – 5 or 6
  • Lettuce – 4-6 leaves
  • Mixed beans – 60g

Cut or tear all vegetables into mouth size pieces.  Using the empty jar add all dressing.  Layer vegetables in the following order from harder to softer; mixed beans, broccoli and cauliflower, tomatoes, paprika and lettuce leaves.
