Matcha Almond Truffles – with a special ingredient

Truffles are a delicious snack when you are on the go. These matcha almond truffles are made with HealthyTOKYO’s premium organic matcha for a burst of energy and vibrant green that only comes with good quality matcha. At En Healthy, we wanted to bring a touch of the mediterranean, so the flower water adds a refined freshness and the honey adds a natural sweetness to these treats.

The no bake nature of these truffles means they are not only easy to prepare but the nutrient value of the ingredients is kept intact as they are raw and not reduced through exposure to heat. Their handy size means you can easily carry them around and use them as fuel before or after you hit the gym. The almonds are a delicious source of plant based protein that is rich in healthy fats.

Yield: 14 truffles

1 cup (200 gr) of almonds without the skin
2 tablespoons of flower water
2 tablespoons of honey
1 teaspoon Organic Matcha No. 2 Energy

1 teaspoon Organic Matcha No. 2 Energy
2 tablespoons of dry, shredded coconut
7 whole cloves


  1. Pour the almonds in a food processor and blend for 2 minutes
  2. Add the flower water and honey to the mixture.
  3. Blend it again until a dough is formed.
  4. Divide the dough into 2 equal portions.
  5. Place one of the portions of dough back into the food processor.
  6. Add 1 teaspoon of HealthyTOKYO organic matcha powder and blend until the dough becomes green.
  7. Shape 7 small balls from the white batch of dough.
  8. Shape 7 small balls of dough from the green batch.
  9. Put the shredded coconut into a small bowl.
  10. In another bowl, place the remaining matcha powder.
  11. Roll the green truffles in coconut.
  12. Dip half of the white truffles in matcha powder.
  13. Stick a clove into the white truffles for aesthetics and aroma.
  14. Place the almond matcha truffles into an airtight container and refrigerate for about 1 hour.

Consume within 5 days.
