Matcha Chia Pudding & Yogurt Bowl

What do your morning meal look like?  If the term morning meals has you baffled then you’re probably starting your day off on an empty tank.  I know, you’ve heard it before – breakfast is the most important meal of the day, but it is true!

Starting the day off with proper fuel will ignite your metabolism and give your body the nutrients it needs to function properly.  Aside from kick starting your body and mind, you’ll be more likely to make better food choices the rest of the day.  Studies have shown that breakfast-skippers tend to be more likely to struggle with weight issues than those who eat breakfast.

Now of course what you eat is obviously important.  If your idea of breakfast is a pastry or some grab as you go processed packaged food, there is a better way trust me on this. The amount of time it takes to pick up something processed on the way to work or school is more than it takes to eat nutritiously at home.

I’ve got some ideas that not only are quick and easy but also pack extra added value using HealthyTOKYO Organic Matcha.  If you aren’t familiar with matcha and the bounty of nutrition it offers it really is something you should consider.  Matcha delivers an incredible amount of anti-oxidants, vitamins and minerals and fiber. It can help stabilize your blood sugar, boost your metabolism and help calm and relax the mind and body to name a few.

Thought matcha was just for drinking?  Matcha is so versatile and lends itself so well to other ingredients and the glorious green hue it adds will have you getting up before the alarm just to eat these make ahead beauties hiding in the refrigerator.

The first recipe looks like desert but I promise it isn’t. This matcha chia pudding delivers a stacked combination of super foods and can be made completely vegan if desired using non-dairy milk.  Feel free to get creative on your own with what kind of fruit you use, how you layer etc.  Consider it an edible art project!

The second recipe combines yogurt (dairy or non) and matcha along with your choice of fruit and nuts.  The limit is endless on what else you can sprinkle on this parfait for added value – chia seeds, flax seeds, coconut etc.

And you thought you didn’t have time for breakfast.  Wrong 


 1 cup non-dairy milk (almond, oat, rice, coconut)

1 ½ tbsp. coconut or cane sugar*

1 tsp vanilla

4 tbsp chia seeds

1 ½ tsp HealthyTOKYO Organic Matcha Classic

Combine milk, coconut sugar and vanilla until well blended using mixer or blender.  Stir in chia seeds.  Reserve one half of the mixture and set aside.  To remainder add matcha until well blended.

Put both chia mixtures in refrigerator, stirring after approximately 1 hour to re-distribute chia seeds.  Once mixtures are jelled begin assembly in glass or parfait dish layering with fruit puree or whole fruits as desired.   Keeps well in refrigerator 2-3 days.

 *Maple syrup can also be substituted but will require setting time and will result in a less firm texture.


 ½ – ¾ cup Greek yogurt (or coconut or soy yogurt)

½ – ¾ tsp HealthyTOKYO Organic Matcha Classic

Assorted fruit, nuts, chia seeds, flax seeds etc.

 Blend matcha into yogurt and top with your desired toppings.  Easily assembled the night before.
