Matcha Hummus and 3 other Healthy Holiday Recipes from Norma’s Corner

The holiday season is upon us and regardless of your traditions or customs, food is usually involved as the holidays are observed and celebrated. I have put together recipes for matcha hummus and three other of my holiday favorites. All are easy to prepare, colorful and delicious. Certain to delight the tastebuds of your family, friends and colleagues. We have four videos to provide some guidance on how to make them. Now on to my first recipe, a cranberry relish that requires some chopping, but no heating. This maintains the highest nutritional value possible while providing a great side dish for your turkey or a topping for your yogurt.

Norma’s Holiday Favorite No.1 – Cranberry Relish

This fresh and raw cranberry relish the perfect accompaniment to many meats, great on top of yogurt or creamy desserts.


1 small seedless mandarin orange
2 cups fresh cranberries
2 Tablespoons Maple Syrup
1 teaspoon fresh grated ginger

Personally, Christmas and New Year’s holds many special customs and traditions for me from childhood and I’ve replicated many of those for my own family. December evokes many fond memories for me. Searching our farmland for the perfect Christmas tree and my mother in the kitchen preparing special foods that only came out at Christmas time bring back so many wonderful thoughts. Unknowingly one special tradition connected me to Japan even as a child in Canada. It was an orange in the toe of my Christmas stocking known to me then as a Japanese orange and now the mikan is a regular in my fruit bowl.

Almost every meal we ate at home had some kind of slaw. Easy to make and super nutritious. This holiday red pepper cabbage slaw incorporates the colors of the season with a great miso dressing I learned how to make here in Japan.


Norma’s Holiday Favorite No.2 – Red Pepper Cabbage Slaw

In small bowl whisk together ginger, garlic, miso, vinegar, soy sauce, sesame oil and water.

Use chopper to chop cabbage and red pepper, yielding approximately 4 cups in all; 3 cups of cabbage, 1 cup of peppers.

Toss with dressing and sesame seeds.


1 tsp fresh grated ginger
1 clove garlic, minced
2 tbsp miso paste
2 tbsp rice wine vinegar
1 tbsp soy sauce
1 tsp sesame oil
2 tbsp water

3 cups chopped cabbage
2 medium size red peppers, chopped or sliced
1 tbsp black sesame seeds

Those smells and sights will never leave my mind and come flooding back when I’m in my own kitchen making preparations for the holidays. Over the years some of those recipes have been modified and new ones added but I still stay true to the basics that helped form those great memories. Standard fare on our Christmas table always centers around roast turkey with cranberry relish. Old and new recipes appeal to individual tastes and uphold tradition at the same time and the Christmas dinner itself holds a place of high esteem in our family. Carrying on tradition connects us to our past and keeps the generations before us close in our heart and minds.

Norma’s Holiday Favorite No.3 – Matcha Hummus

To make the matcha hummus, rinse and drain chickpeas and add to food processor and pulse until smooth. Add in remaining ingredients and process until well combined. If required, add in extra water to achieve proper consistency and adjust lemon juice and garlic to taste.


1 can chickpeas (approx. 2 cups)
2 Tbsp tahini
¼ cup warm water
½ Tsp salt
¼ Tsp cumin
1 clove garlic (adjust to taste)
Juice of one lemon
1 ½ Tbsp olive oil
½ – ¾ Tsp Organic Matcha No.3 SPRINKLE

Whether your holiday is full of tradition or making new memories, keeping the food healthy is easy to do by modifying old recipes to lighten them up. Switch up heavy butters for more heart healthy olive or nut oils, lower fat dairy for high fat creams and natural sugars for refined sugar. Or add some new dishes to your table and expand tradition for the generations to follow. With the all the special holiday food it is easy to over indulge so don’t forget to listen to that little voice in your head when you are full and keep on track with your exercise plan and as 2017 arrives you won’t be tipping the scales.

This last recipe may carry a few more calories than you usually take-in, but after all it is the holiday season and if you are going to indulge a bit, this is certainly a good time to do so! This holiday goat cheese roll is an absolute hit with my friends and family at New Years – right next to the welcoming champagne.


Norma’s Holiday Favorite No.4 – Holiday Goat Cheese Roll

Place goat cheese roll on cooking or parchment paper and roll in combined chopped nuts and dried fruit, pressing lightly until well adhered. Nut and fruit combination easily varied.


6 or 8 oz goat cheese log
1/3 cup chopped nuts
¼ cup dried persimmons
