It feels like winter has decided to make a cameo this spring, so I thought this recipe for matcha yuzu salmon would be warming, yet refreshing, at the same time. It’s well known that fish and citrus are a match made in heaven when it comes to taste. The Japanese yuzu is a type of citrus that originated in China. Unlike other citrus fruit, yuzu can withstand temperatures as low as -9 degrees due to its thick, outer skin. It has a very unique fragrance and although it is not often eaten as a fruit, the rind and juice are often used as a garnish, seasoning or added to drinks as a stand in for lemon. Like other members of the citrus family, Yuzu possesses a very high Vitamin C content.

Yield: enough sauce for 4 servings of fish
4 filets of salmon (or fish of your choice)
4 tbsp yuzu juice
2 tbsp honey
1 tsp Organic Matcha No. 4 Cooking
½ cup plain Greek yogurt
Pinch of cayenne pepper and salt
- Add the yuzu juice and honey to a small pot.
- Simmer the yuzu juice and honey.
- Blend in the matcha.
- Set the sauce aside to cool to room temperature.
- Whisk in the yogurt and spices.
- Cook the salmon as you like it.
- Drizzle the matcha yuzu sauce over the salmon and enjoy.
