We fry the burdock sticks in a fish paste made from locally caught fish, using walleye pollock from Hokkaido, as well as sea bream, mackerel, barracuda, and Spanish mackerel caught int Kyushu and Sanin.
We have high standards for the fish we use, and these carefully selected catches add depth and flavor to the burdock.
How to prepare
Our Heavenly Burdock Sticks have already been fried, so preparation is just a matter of thawing and heating them. They can be thawed in the refrigerator or a toaster oven. Tossing it in the oven to warm it up a little bit more only makes it even more delicious.Burdock is often sautéed and simmered along with other vegetables, and is also popular to use in sushi and tempura dishes. The soft and crunchy texture make burdock-based side dishes fantastic for something to nibble on while having an alcoholic drink, and also make it well suited for pickling. Recipe recommendation: To prepare Kinpira Gobo, use julienned burdock and carrots braised in a combination of vinegar, sugar, soy sauce, and mirin (rice wine). (Other vinegars can also be used, as can sake.)
