About the product
This item consists primarily of Sakhalin shishamo smelt, dried with mirin. It uses a traditional mirin tare sauce from Himi in Toyama Prefecture, and is sprinkled with white sesame as a finishing touch. The smelt becomes suffused with the mirin tare sauce due to a long period of soaking (36 hours), and even when the smelt is cooled after grilling it is unlikely to stiffen. This item has come to be called “sakura-boshi” because the white sesame sprinkled atop the smelt resembles scattered cherry blossom (sakura) petals.
Shishamo smelt is particularly high in DHA and EPA. 100g of shishamo smelt contains 2000mg DHA and 760mg EPA, while Pacific saury contains 1398mg and 844mg respectively, and Japanese pilchard contains just 1136mg and 381mg respectively.

How to prepare
Defrost in the refrigerator. Then lightly grill each smelt on both sides, taking care that they not burn, and enjoy. Another easy way to prepare these smelt is to place them on aluminum foil in a toaster oven (1000w) and bake them for 3 to 4 minutes. It won’t take long for these smelt to cook thoroughly, so please be wary of overcooking.Note: While frozen, the starch on the surfaces of the smelt may turn white. This does not affect the quality of the item. Once the smelt has defrosted, the white portions of starch will become transparent.This item makes a great snack, and can also be served as an appetizer or side dish, or simply atop rice!
