About the product

This soy sauce has been duly fermented and allowed to mature, and is made using 100% whole soybeans. In all the features of whole soybeans – their characteristic bright color, mellow fragrance, mild taste, and deep richness – there lies a harmonious flavor.

Soy sauce quality guidelines are included in the JAS (the Japanese Agricultural Standards). The highest JAS grade for soy sauce quality is “Special Grade,” which means a soy sauce has a Nitrogen content of 1.5% or higher (Nitrogen can serve as an indicator of umami). This dark soy sauce is “ultra-extra select,” which is a grade given by the Japanese Soy Sauce Association to soy sauce with a Nitrogen content of 1.8% or higher.

How to prepare

After opening the bottle, store it in the refrigerator (below 10℃) and use as soon as possible.
