Since the 16th century, matcha has become synonymous with harmony and tranquillity. It has gained its reputation as the core of the sophisticated ritual of the tea ceremony, both appealing and at the same time daunting in its complexity. All our efforts have been concentrated into bringing you traditional matcha in a way that is easy to understand, while it embodies the true, solemn essence of the tea ceremony. Our Matcha Superior Ceremony uses exclusively ichibancha (first flush leaves), the finest tea plucked during the earliest harvest. Grown and harvested on the lush hills of Kagoshima and Aichi, and meticulously plucked between May and June, the leaves used in our matcha are 100% organic.
Only the finest tea leaves are selected, before being carefully processed and ground into a delicate powder with great patience. A long, careful process, for which grinding 30 grams of tea leaves with handmade stones can take one hour. The resultant taste is natural, not contaminated by synthetic chemicals, pesticides, or heavy metals.
As with all organic matcha, its taste depends on factors including the weather, soil and growth. You will never find two identical matchas, as you will never find two identical bottles of wine. Whisk and Enjoy
To enjoy Organic Matcha Superior Ceremony in its pure form, add half a teaspoon of matcha powder to your cup, pour hot water (ideally at a temperature of 80°C), and whisk until you obtain a rich foam with fine bubbles. Then serve and savor.
It is not, however, the only way to prepare matcha: if you add a larger dose of powder to a smaller quantity of water (around 8g per 80ml), you will obtain a milder, sweeter, thick tea (koicha). On the other hand, if you add a smaller dose to a larger quantity of water (around 2g per 80ml), then you will have a lighter, slightly more bitter tea (usucha). Both are equally enjoyable, let your palate guide you into preparing the perfect cup for yourself.
