The media giant, NHK has caught wind of HealthyTokyo’s new and innovative matcha creations and Norma will be live on air preparing two unique matcha recipes! NHK Asaichi is a very popular morning talk show in Japan that airs from 8.15am-9.54am (don’t you love that precision?) Mike and Norma will be there to talk about HealthyTokyo organic matcha live on TV! The Hollandaise sauce on the Eggs Benedict was infused with organic matcha, giving it a fresher flavor. The avocado and salad added even more plant based goodness to the perfectly poached eggs.

I could talk about the smoothie bowl all day, but let me just say, the Detox Set absolutely hit the spot! The veggies (kale and spinach) combined gloriously with the fruitiness of the kiwi, bananas, strawberries, and blueberries. The smoothie bowl was garnished with lashings of matcha and granola. The cool airiness of the smoothie, the pop of the fruit, and crunch of the granola created a texture sensation.

The accompanying kale salad was dressed with a tart orange colored dressing, creating an appetizer with contrasting flavors perfect for that warm spring day.

Obviously, no meal is complete without a healthy dessert! Aloha Table’s take on Tiramisu was laced with matcha, not only in the coffee soaked sponge, but infused in the fluffy whipped cream. For a finishing touch, it was generously dusted with matcha powder. This Japanese style tiramisu also contained a layer of Azuki beans for added protein and drizzled with Kuromitsu 黒蜜 (which is similar to molasses) for a touch of extra sweetness.

We were blessed with gorgeous spring weather last weekend. The warm breeze and sunshine were the perfect setting for our matcha sampling session in Hiroo. Not only did the constant stream of sugar-free vegan matcha lattes give us #energy, but meeting all your friendly faces made our weekend! We made so many great friends and thanks to National Azabu supermarket, HealthyTokyo was able to spread the word about premium organic matcha and the incredible health benefits you can gain from adding it to your diet.

Before HealthyTokyo’s tasting event, no doubt many people knew what matcha was. While matcha is synonymous with Japan, it can be hard to know how to prepare and consume it beyond the traditional way of whisking it with hot water.

Matcha Honey Butter – a decadent spread free from trans fats, hydrogenated oils and refined sugars

If you’ve tried my matcha sauce recipe then you’ll love this matcha honey butter! I’m always thinking about healthy condiments and spreads for baked goods because the store bought varieties are completely overloaded with refined sugar, hydrogenated fats and other additives. In my opinion, nothing beats butter and honey on toast or freshly baked bread for both simplicity and flavor. The slight saltiness of the butter and the hint of sweetness from the honey are both naturally enhanced by the matcha.

Matcha is the darling of the health world and we are lucky enough to be able to find organic matcha in Japan so easily thanks to HealthyTokyo. I’ve not only replaced coffee with matcha every morning but since I’ve tried organic matcha, the flavor is unparalleled and I’ll never go back to conventionally grown products.

Produced by bees, honey is considered a nutritive sweetener as it provides some health benefits compared to refined sugar. The sweetness in honey is due to the combination of monosaccharides fructose, glucose, maltose and sucrose. Since ancient times, honey has been used as a burn salve and praised for its wound healing properties. Honey is known to provide relief from coughs and a sore throat. The antibacterial qualities of honey are an effective relief from many minor skin conditions. Honey contains trace amounts of many vitamins and minerals. Antioxidants and bioactive plant compounds are also present in honey, darker honey being richer in these qualities. Honey is considered a healthier option when it comes to sweeteners as it lowers LDL (bad cholesterol) and reduces inflammation. Honey does increase blood sugar levels due to its sugar content but not to the same extent as refined sugar. Although honey is not dangerous and does not spoil, it should not be given to infants under the age of one as they do not yet have a properly developed immune system.

I prefer to use salted butter in this recipe as it brings out the sweetness of the honey and the complex flavors of the matcha, however it is a personal preference, so if you prefer this matcha honey butter as a completely sweet condiment then by all means, use unsalted butter.

This matcha honey butter isn’t limited to breakfast foods or sweet baked goods though because it pairs nicely with a wide variety of foods. Spread it on muffins, toss it into roasted vegetables or even use it to flavor seafood. Get creative in the kitchen!

Yield: ¼ cup

Ingredients

4 tbsp butter, softened (salted or unsalted)
1 tbsp honey
1 tsp Organic Matcha No. 3 Sprinkle

Method

  1. Mix all the ingredients together

The recipe for this matcha honey butter is as quick and easy as they come, but the combination of flavors and vibrant color will have you believe its a professional, artisan product!

Matcha Yuzu Salmon – A Unique and Fragrant Way to Flavor Fish!

It feels like winter has decided to make a cameo this spring, so I thought this recipe for matcha yuzu salmon would be warming, yet refreshing, at the same time.  It’s well known that fish and citrus are a match made in heaven when it comes to taste.  The Japanese yuzu is a type of citrus that originated in China.  Unlike other citrus fruit, yuzu can withstand temperatures as low as -9 degrees due to its thick, outer skin.  It has a very unique fragrance and although it is not often eaten as a fruit, the rind and juice are often used as a garnish, seasoning or added to drinks as a stand in for lemon.   Like other members of the citrus family, Yuzu possesses a very high Vitamin C content.

Along with yuzu, matcha is another star ingredient in this recipe.  Japanese matcha has a multitude of health benefits:

  • rich in antioxidants such as EGCG, catechins and polyphenols;
  • contains natural detoxification properties;
  • can contribute to a healthy metabolism;
  • can control cholesterol,
  • stabilizes blood sugar levels;
  • contains the amino acid L-theanine that works with caffeine for stable energy release which also in turn, increases concentration;
  • rich in vitamins A and E for a healthy immune system and clear skin

The list goes on, read more about the health benefits of matcha here!  Teaming matcha and yuzu together for this recipe, not only combines two unquestionably Japanese flavors but also creates a cocktail of health benefits.

The tangy quality of yuzu enhances the other aspects of this dish without being overpowering.  The yuzu juice and yogurt combination are a wonderful blend of tart and creamy and provide a contrast to the matcha.  I hope the complex flavors of this matcha yuzu salmon will bring spring to you on this cold day.

Matcha Yuzu Salmon

Yield:  enough sauce for 4 servings of fish

Ingredients

4 filets of salmon (or fish of your choice)
4 tbsp yuzu juice
2 tbsp honey
1 tsp Organic Matcha No. 4 Cooking
½ cup plain Greek yogurt
Pinch of cayenne pepper and salt

Method

  1. Add the yuzu juice and honey to a small pot.
  2. Simmer the yuzu juice and honey.
  3. Blend in the matcha.
  4. Set the sauce aside to cool to room temperature.
  5. Whisk in the yogurt and spices.
  6. Cook the salmon as you like it.

Matcha Sakura Latte – in celebration of Vernal Equinox Day

This Matcha Sakura Latte is the perfect way to celebrate Vernal Equinox Day!  Today is the first day of Spring and as the days get longer, the weather gets warmer and a dazzling rainbow of floral colors greets you at every turn.  There are many beautiful flowers that bloom during Springtime in Japan, such as plum blossoms and magnolias but none are more beautiful, nor iconic than, Sakura – the cherry blossom.

Heralding spring, the blossoming sakura signify a time of renewal, growth and beauty, and this matcha sakura latte will bring new life to you too!  This matcha sakura latte uses real cherry blossoms that have been preserved in salt and in only a few short minutes, the natural beauty of spring will be blossoming in your kitchen as you sip this very special, seasonal, matcha sakura latte.

Similar to sakura, matcha is quintessentially Japanese.  It has a long history and is steeped in tradition and beauty.  What I love about this matcha sakura latte is, it is a wonderfully modern way to enjoy HealthyTokyo organic matcha.  Matcha is teeming with health benefits so it’s a delicious way to energize and get your daily antioxidant hit.  Unlike coffee, the caffeine in matcha is slow releasing, thanks to l-theanine, so there are no nasty energy peaks and troughs.

The scent of Spring is already in the air, and the best way to to spend Vernal Equinox Day is in the sunshine, gazing at the sakura with a matcha sakura latte in hand.

Ingredients

Yield: One 8oz latte

8 oz milk of your choice
1 ½ tsp Dolcedi Apple Syrup*
1 tsp Organic Matcha No. 2 Energy
1-2 preserved cherry blossoms, pre-soaked in water*

Method

  1. Soak cherry blossoms in ½ cup water for 10-15 mins before using to remove salt.  Soak longer if you prefer to remove all traces of saltiness.
  2. Drain and chop the sakura finely.
  3. Add sakura, milk and apple syrup to a saucepan and heat gently.
  4. Meanwhile, mix the matcha with a few teaspoons hot water.
  5. Blend the matcha water into the milk mixture whisking until frothy.
  6. Pour into a mug.
  7. Garnish with another sakura blossom if desired.

*Dolcedi apple syrup can be found on the HealthyTokyo online shop.
*Preserved cherry blossoms can be found at bulk food stores throughout Tokyo.

Happy St. Patrick’s Day everyone! I hope you’re wearing something green so you don’t get pinched! I created the recipe for this Matcha Shamrock Shake in the spirit of the Irish! This St Patrick’s Day, why not go the healthy route and knock back this healthy, vegan and paleo friendly Matcha Shamrock Shake instead?  Not only will you be luckier than a four leaf clover, but I guarantee you’ll feel leaps and bounds healthier than if you knocked back countless pints of beer!

When you think of the word shamrock, you immediately think of everything green; leprechauns, Ireland and of course St. Paddy’s Day.  Having drank more than my fair share of this Matcha Shamrock Shake, I know you’ll find yourself making it long after this infamous ‘green’ day has passed. Who says you can’t have dessert for breakfast? The creamy and minty flavor tastes like the most decadent, indulgent shake ever, but fear not, it’s completely healthy, so go ahead – I fully endorse this one!

This Matcha Shamrock Shake combines matcha, mint and avocado into a velvety smooth shake that draws on the plant-based wonders of coconut milk with a touch of maple syrup for sweetness.  This recipe satisfies everyone from vegans, to paleo and well, basically everyone. The nutritional properties of mint and avocado are numerous and well documented. The health benefits of avocado range from aiding digestion to providing heart healthy essential fats. The addition of organic matcha takes it off the charts in health benefits.

1 cup coconut milk
½ avocado
1 handful of mint
1 tsp maple syrup
1 tsp vanilla
1 tsp Organic Matcha No. 2 Energy
1 cup ice

Method

  1. Blend all the ingredients until smooth.
  2. Pour into a glass.
  3. Garnish with cacao nibs and a sprig of mint if desired.
