On the surface, HAL YAMASHITA TOKYO might look like any one of Tokyo’s many luxury fine dining fusion cuisine restaurants. But it’s what lies deeper, at the heart of the matter and behind the scenes, which separates HAL YAMASHITA TOKYO from all others. Located in Tokyo’s classy Midtown district, HAL YAMASHITA TOKYO is a culinary experience imagined by owner and operator, Executive Chef Haruyuki Yamashita, who’s created “a relaxing place inspired by Japanese Zen peacefulness, where you can savour a truly enjoyable and refreshing time.”

Walking into organic and healthy restaurant HAL YAMASHITA TOKYO will transport you to another space and time, one where waterfall-imaging illumination and Japanese paper-decorated walls blend harmoniously to further express the beauty of the restaurant’s elegant dishes.

Award winning Chef Yamashita was born and raised in Kobe. He is undoubtedly an artist of the highest caliber, paying attention to the tiniest details – from the restaurant’s look, décor and ambiance, to its regularly changing menu, the food itself, and every ingredient used.

Although he is attracting worldwide attention for his “Nouvelle Japanese” cuisine, Chef Yamashita prefers not to be classified and instead calls his style of gastronomic delight, the “HAL YAMASHITA style”. He greatly incorporates Japanese culinary aspects and ingredients, such as his use of eight different soy sauces, six different salts and six different misos. He also places immense priority on the use of healthy, organic vegetables from specially contracted farms, organic rice from the Ishikawa area, and original herbs from Wakayama.

To compliment HAL YAMASHITA TOKYO’s magnificent dishes, they offer over 1,600 bottles of Australian wine as well as an exclusively produced "kimoto" style sake appropriately called, “HAL SAKE”, that perfectly suits and enhances their entrees and seafood dishes. Only 1,000 bottles of this award winning sake are produced each year!

    The quality of the locally grown Japanese rice combined the pure mineral water flowing down from the Rokko Mountains makes HAL SAKE something that we take pride in and are very excited to offer as a complimentary drink to HealthyTokyo Membership cardholders.

    HAL SAKE is exclusively produced for HAL YAMASHITA TOKYO by the over 260 year old SHU-SHIN-KAN brewery in the NADA district of Kobe, an area acknowledged for centuries for producing the finest sake using only natural ingredients. With a slight touch of melon and citrus flavors, the result is elegant and refined sake with an exquisite all around character made to coordinate with all of the dishes introduced on our menu.

    For those who prefer a non-alcohol option, the offer can be exchanged for a complimentary seasonal fresh juice.
