About the product
This dough needs only one round of fermentation, making the bread-creating process easier! We added 2.5 times the usual amount of yeast and 2% panettone yeast (a natural Italian yeast) in order to give the dough increased flavor and umami. In addition, lots of butter and eggs were used in the dough, making it still more delicious. With this dough, you can enjoy richly flavorful, fresh-baked bread in the comfort of your own home.
How to prepare
Defrosting the dough: Place the frozen dough pieces on a tray, leaving some space between them. Cover them with plastic wrap or something similar so that their surfaces don’t become too dry. Defrost them overnight in the refrigerator (about 10 hours). Then place the dough pieces at room temperature, adjust their shaping if they have become dented or squished, and let them rest for about 20 minutes. Shaping and fermenting: If the dough is difficult to stretch or if its surface gets any open cracks, let the dough rest for an additional 10 minutes. Once you have formed the dough pieces into their final shapes, place them on a baking tray; leaving some space between them. Ferment the dough for 40 to 60 minutes at 35 to 40℃, being careful that the dough does not dry out. The dough should expand to roughly 2 to 3 times its original size. Baking: Bake the dough in a small pan for 9 to 12 minutes in an oven preheated to 180 to 200℃. Make sure to store the dough in a freezer that is below -18℃. Once the dough has been defrosted, it should absolutely not be refrozen. If the dough ferments even once, it should be used in its entirety.
