About the product
Fukujinzuke is a traditional Japanese garnish made by slicing up 7 kinds of vegetables and then pickling them in a liquid mixture of ingredients such as soy sauce, sugar, and mirin (“fukujinzuke” is literally “lucky god pickles,” and there are seven Lucky Gods who are grouped together in popular legend).
Our fukujinzuke contains finely sliced daikon radish, eggplant, lotus root, and sword beans, as well as ginger, shiso, and sesame; and is pickled for 3 days in a simple mixture of sugar, soy sauce, brewed vinegar, and table salt.
Many other commercially available versions of this product are dyed red using ingredients such as artificial food coloring. Most use chemical seasonings, and many are heavily sweetened to prolong their shelf lives. Because our fukujinzuke is frozen, it is easy to keep on hand for whenever you need it; and you can rest assured that it contains no food coloring or chemicals of any kind.
How to prepare
Defrost in the refrigerator. To defrost more quickly, place the entire bag beneath running water. After defrosting, the fukujinzuke can be eaten as-is and makes a great topping for curries! It can also be used to garnish other dishes, or even plain rice.Once it has been defrosted, store it in the refrigerator (below 10℃) and use as soon as possible.
