Vegetable papaya is also called green or unripe papaya. Don’t let the label ‘unripe’ fool you – both unripe and ripe papaya can be used in cooking. These papayas have been julienned and frozen rapidly, and are ready to use in cooking as soon as they are defrosted – no need to spend time skinning or de-seeding the papaya!
Unripe papaya is highly resistant to freezing, and has a pleasing texture. It can be used in any and all sorts of recipes, including stir-fry, salads, and soups. Pre-sliced, frozen unripe papayas such as these are not usually commercially available! Unripe papayas contain potassium, papain (an enzyme that aids in the digestion of protein), antioxidants, and vitamin A. Due to the nature of unripe papaya, the julienned strips are not frozen separately, but instead are frozen in a block.

How to prepare
Remove the unripe papaya from the bag, place it in a colander and let it sit beneath running water to thaw. Then simply dry it off, and it is ready to use. Once thawed, the unripe papaya can be used as-is as an ingredient in salad, soup, and stir-fry. After defrosting the unripe papaya in the refrigerator or by running water over the bag, place the papaya in a colander and drain it for easier use.
