A really terrific chardonnay here from Hidden Bench, at the top of the class. This has every bit the complexity, flavour, savouriness and seamlessly integrated wood of the best. Marvelous density and intensity on a lithe and vibrant frame. A steal for the price. Tasted August 2015.

This is a very refined, solid and complex Niagara bench chardonnay. The nose is nicely lifted with pear, nougat, spice, lemon vanillin and herbal notes. Its medium-full bodied, with firm acidity, minerality and a hint of tannin. The length is excellent. Textbook premium Niagara chardonnay. Tasted August 2015

A best of both worlds Chardonnay; indicative of the giving vintage (in quality, not quantity, prestige, not prosper) and an Estate, house style with some cosmetics to enhance the consequence. Really typifies and explains what a Marlize Beyers Chardonnay is. Elegant, stylish, with perfect skin, tones, understated beauty and the soft vernacular of few yet precise words. The texture and feel of this Chardonnay is downy, lacey and so very understated. You simply can’t take your eyes off its charms and your palate away from its soft feel. A wine of character and poise. Drink 2015-2020. Tasted August 2015.
The Chardonnay vines for this wine were meticulously maintained to showcase the terror of Beamsville Bench. All grape bunches were exposed to sunlight at fruit set by completely removing leaves on the East side and partially on the West side of the canopy to maximize ripening. Green harvesting – the removal of under-ripe bunches – was performed at the first sign of colour change in berries from green to gold (This is known as véraison). Hand harvested from 11 September to 18 October 2013 (organically certified grapes).
All fruit was handpicked, sorted and whole bunch pressed to yield the most pure juice. After cold settling, the juice was racked, warmed and then transferred to barrel. The wine was slowly fermented with indigenous yeasts reaching a peak of 22 degrees Celsius. Partial malolactic fermentation occurred naturally and all barrels were stirred weekly during fermentation. The barrels for this wine were selected and blended and filtered before bottling.

Each and every wine at Hidden Bench is made under strict conditions:
- Sustainable practices, which means 100% organically certified fruit from only estate vineyards.
- Individually bunch sorted white wine varietals and bunch sorted and then individual berry sort all of the red wine varietals.
- Non-interventionist, minimalist winemaking approach with gentle handling of the wine throughout the winemaking process.
- All wines are made with wild yeast and anything that doesn’t ferment naturally is inoculated and declassified into the winery’s bistro label.
