How to prepare
Soak in 1% saline solution (dissolve 1 teaspoon salt to 500ml water), take out once glaze (iced surface) is melted. Dry with paper towels.It is easiest to cook and cut when it’s still half frozen and also prevents the juice from outflowing. Can be used as ingredient in a variety of cuisines such as Japanese, Western or Chinese, not to mention sashimi, seared with butter, simmered in cream, or fried.You can consume them raw or lightly sautéed to enhance the natural taste of these scallops.One delicious way to prepare is to sauteé with ginger, scallions and shiitake mushrooms. You can also steam them with sake and some butter. They are also excellent in soups and stews.
