These high-quality lotus roots have been cut into equally-sized slices 8 to 10 mm thick for easy use in tempura or in stews. Once harvested, our lotus roots are brought into the factory and sorted. After sorting, one hour elapses between peeling and freezing. Because the fresh roots are processed quickly, it is unlikely for them to experience changes in color.
These lotus roots make a lacey, attractive addition to stews and other dishes, and can also be used in tempura. They come in easy-to-use ziplock bags. Lotus root contains vitamin C, phosphorus, and potassium.
How to prepare
Without defrosting the package, take out the portion of lotus root you will be using. When adding to stews and when frying, the lotus root can be used frozen. To eat with sauce or to add to salads, place the lotus root in boiling water and blanch briefly before use. To make fukumeni (a type of Japanese stew) using lotus root, season and heat your broth. When it begins to boil, add the lotus root frozen and cook on medium heat for 6 to 7 minutes. Then, turn the heat off. The lotus root will become saturated and soak up the flavors of the broth. Lotus root is also a popular ingredient in Japanese-style curry. Though the lotus roots’ color may stay consistent during the freezing process, they often absorb colors from the sauces and spices they are cooked with; and in curry dishes or stir-fry lotus roots will turn a beautiful golden brown.
