About the product
Ma Po Eggplant is a classic dish from the Sichuan province of China, a region famous for its fiery, mouth-numbing cuisine. It traditionally consists of stir-fried eggplant, accented with ground pork, in a piquant red sauce. But don’t worry—we’ve toned down the spice to suit the Japanese palate.
Our healthy Ma Po Eggplant uses one eggplant (the edible portion, approx. 70g), and the substitution of chicken for the usual pork makes it lighter.
Both chicken and pork are plentiful sources of protein, but ounce for ounce, chicken breast contains much less fat than pork. If you are watching your calorie intake, the lean white meat of chicken breasts is an ideal replacement for other kinds of meat in your diet, as the lower fat content means it contains fewer calories as well. And if you cook it in a flavorful sauce, then you won’t even miss the juicy texture of fattier cuts of meat.
Eggplants are an excellent source of vitamin B1, copper, and especially fiber, a nutrient which tends to be lacking in the Japanese diet. In addition, the pigment in eggplant skin contains a phytonutrient called anthocyanin, which has cancer-fighting antioxidant properties. Japanese scientists have named this nutrient “nasunin,” after the Japanese word for eggplant.
This vegetable-forward dish is great for those who don’t get enough vegetables in their diet on a regular basis. The recommended daily allowance (consumption target) of vegetables is 350g.
How to prepare
To prepare, simply submerge the bag, still frozen, in plenty of boiling water for about 5 minutes and transfer to a plate.
