Mentsuyu (noodle sauce)
Made using kombu seaweed from Hokkaido and katsuobushi from Yaizu. Highly flavorful; dilute by half to use.
Can be used as dashi soup stock, or as dipping soup.
Each bottle is 400ml.
Store at room temperature until opening, then refrigerate.

About the product
Fragrant, soup stock-esque mentsuyu. This mentsuyu is made using awase-dashi soup stock accented with fish sauce. The soup stock uses rishiri kombu seaweed and makombu seaweed from Sakhalin and honkarebushi bonito and ara-honbushi bonito from Yaizu as its base, and the fish sauce is made using sardines.
This mentsuyu is made without using mirin or other ingredients containing alcohol so as not to obstruct the fragrance of the bonito or the kombu seaweed.
About the ingredients: The use of rishiri kombu seaweed and makombu seaweed from Sakhalin result in a high-quality product with fragrance and umami. Honkarebushi bonito has a rich fragrance, and ara-honbushi bonito has strong umami. The honkarebushi bonito has been smoked for about 2 weeks, and has had mold applied to it 4 times. It is a top-quality product that takes 3 to 6 months to make. The ara-honbushi bonito has been smoked, and dried for 6 to 20 hours.
How to prepare
How to use: Feel free to adjust our ratios according to your tastes. Dipping soup for noodles (tsuketsuyu): Combine equal parts mentsuyu and water or broth. Soup with noodles (kaketsuyu): Combine 1 part mentsuyu with 3 parts water or broth. Dipping sauce for tempura, sauce for rice bowls: Combine equal parts mentsuyu and water or broth. Stews: Combine 1 part mentsuyu with 3 to 12 parts water or broth. Takikomi gohan, oden: Combine 1 part mentsuyu with 6 parts water or broth. When the mentsuyu bottle is opened, all of it should be used at once if possible. If there is some left over, be sure to shut the cap securely, store the bottle in the refrigerator (below 10℃), and use shortly after.
