Silk refers to the smooth texture of the tofu which is impacted by the type of cloth being used for the straining (as to Momen tofu which is less smooth because of the cotton cloth being used for straining.). Okara is also called Unohana (flower of U) because it looks like the Utsugi flower. Okara is a part of soybeans that remains after straining the soy milk to make tofu or drink as is. Therefore the nutrient composition is similar to that of soy milk; however, it has more protein and calcium.
It is also very rich in insoluble fiber which makes Okara one of the best foods for low-calorie diets while getting high nutritional value.
How to prepare
Keep contents in the inner bag and place it under running water for thawing. Okara can be used for wide variety of dishes including hamburgers, meatballs, dumplings, pastas, pastries such as cookies, donuts, etc. The most popular way to cook Okara is Nimono or Irini. Finely chop carrot, burdock, leak, Shiitake mushroom and Chikuwa (rolled fish cake) and pan-fry in a pan with small amount of cooking oil. Add thawed Okara and pan-fry until mosture is gone. Then add Dashi, soy sauce, sake, sugar and cook until the liquid is absorbed. Serve hot or cold.To use Okara in a salad, slice half a cucumber and a little bit of onion. Sprinkle them with salt and when it withers, squeeze the excess water with a paper towel. Season with 2 tsp of mayonnaise and 2 of milk (and optionally 2 tsp of sushi vinegar). Mix in thawed Okara and add salt and pepper to taste.
