This mentaiko is made with natural walleye pollock eggs that have been soaked thoroughly in seasoned liquid so as to draw out their umami and eliminate any undesirable flavors.

How to prepare
Defrost in the refrigerator.Once it has defrosted, the mentaiko can be used as-is to garnish warm rice. It is also delicious lightly pan-fried. Mentaiko can be eaten with onigiri, ochazuke, aemono, pasta, and other foods. Use the mentaiko as soon as possible once it has been defrosted.Onigiri are rice balls, often eaten for a quick meal on the go or as a snack. Ochazuke is rice with tea or broth poured on top, garnished with chirimen or other toppings. Aemono refers to seafood or vegetables in sauce.Mentaiko can often be found in surprising places. One very popular non-traditional use of mentaiko is as a component of a type of buttery spaghetti sauce!
